PAD PAK BUNG NAM MAN HOY

INGREDIENTS :

1kg morning glory, 3 cloves of garlic, 1 red chili pepper, 1T oil.


SEASONINGS:
1T Thai shrimp paste.

PREPARATION :

1. Cut off any roots of morning glory; Discard any wilted leaves; Cut into sections; Soak in water for 30 minutes; Lift the morning glory up; Rinse and drain.
2. Peel, rinse and mince garlic.
3. Rinse red chili pepper; Cut off the stem; Discard any seeds; Julienne.
4. Pour water into a deep wok; Bring to the boil over a high heat; Cook over a medium-high heat for 1 minutes; Set the water aside; Add 1T oil to the wok; Heat over a medium heat for 1.5 minutes; Add the garlic; Stir-fry over a medium heat briefly; Add the morning glory; Stir-fry over a medium heat for 1 minute; Add seasonings and the red chili pepper; Stir-fry over a high heat for 2 minutes; Turn off the heat; Arrange on a plate; Ready to serve.
